Beetroot has always been one vegetable which rarely made it onto our dining table mostly because of its dark maroon color. Due to its high folate content and several other nutritive values, I was always interested in introducing it to my kids who are naturally very picky eaters. One of my acquaintances gave me an idea as to how I could use them appealingly and it became an instant hit.


Ingredients -
Beetroot - 1 medium
Onion - 1 medium
Besan - 1/2 cup
Rice flour - 1/2 cup
Mirchi powder - 1/2 tsp
Garam masala - 1/2 tsp
Garlic (optional)
Coriander leaves (optional)
Method of Preparation -
Cut beetroot and onion into thin long strips.
In a mixing bowl, add all the ingredients and make a thick batter making sure there are more veggies than the flour.
In a frying pan, heat oil in a medium-high flame and drop small dumplings of the batter into the hot oil. Fry them till they turn golden brown and take them out onto a paper towel to drain the excess oil.
Enjoy them with ketchup or otherwise.
