This is another variation of the cabbage curry. This vegetable is so versatile that it can be combined with various other vegetables and made much more palatable. Due to its nutritional profile, I like to include cabbage at least once a week. In my experience, by adding Potato this curry attracts the attention of kids. So one way to get the kids to eat cabbage is this...

Ingredients -
Chopped Cabbage 2 cups
Potato chopped 1 cup
Turmeric - a pinch
Ginger 1 inch
Coconut (grated or powdered) 3-4 tsp
Green chillies 2-3 nos
Jeera 1 tsp
Coriander leaves
Salt to taste
Seasoning (oil, chana dal, urad dal, mustard seeds, dried red chilli, curry leaves)

Method of Preparation -
In a skillet on a medium-high flame, heat some oil and add the seasoning.

After the mustard seeds start crackling, add finely chopped cabbage, potato and turmeric and saute them for a minute.

Sprinkle 1/4 cup of water, cover and let it cook for 10-15 min or until the cabbage is cooked.
(Alternatively, Chopped cabbage and potato could be microwaved for about 7-8 min or pressure cooked and added)

Add the paste of Ginger, Coconut, green chillies, jeera and coriander leaves.

Add salt and mix for a couple of minutes.

Switch off the flame Serve hot with Chapati or Rice.

Serves 3 Adults
Preparation Time 25 min
