I was trying to see if I could make any crispy crackers without deep frying them in oil. Since I had an interest in baking, and was influenced by the Madhuram's blog egglesscooking.com, I decided that baking was the way to go. After experimenting with various combination of flours, I found this proportion of flours gives the right crunch. I wanted to include some veggies too. So tried a combo of kasoori methi and onions. But take care to limit the quantity of kasoori methi as the crackers could get bitter. We could also use fresh methi leaves instead of kasoori methi. I should try that the next time. Or maybe even mint leaves...just thinking aloud about the variations to this.




Ingredients - 
Rice Flour 1/2 cup
Wheat flour 1/4 cup
Maida 1/4 cup
Baking powder 1 tsp
Kasoori methi 1 tsp
Onion 1 medium, finely chopped
Salt 1 tsp
Pepper/Chilli powder 1/4 tsp
Sugar 2 tsp
Olive oil/Butter 3 Tbsp


Method of preparation - 
In a mixing bowl, sieve in all the flours along with baking powder.


Finely chop the onions and add the rest of the ingredients and mix them well. 

Add water little by little to make a dough. Roll out like a chapati and cut out any shape of your choice with a cookie cutter.

Place them on a foiled lined cookie sheet about an inch apart. Preheat the oven at 400F and bake them for 15-20 min (depending on the oven) until the tops are golden brown.

Cool them and store in an airtight container. Serve them with cheese. Kids will love them.

  2. I made these yesterday, came out very good. Felt that dough need to set for 15-30 mins in fridge before rolling. But tastewise they came out so good. I skipped onion and added cumin,carom seeds. Thanks for sharing recipe.
