Need something nutritious for the kids?? Get them hooked on to this..I am sure the whole family will enjoy this healthy breakfast/snack. I always crack my brains to come up with something my kids will eat and eat with real pleasure. And once when I had some leftover dosa batter, I thought I should try something interesting with it. Thats when this mixed legume uthappam entered our kitchen. By the way, many of the ingredients can be substituted with other interesting veggies/legumes according to individual taste. This is how I made...


Ingredients -

Urad dal 1/2 cup
Rice 2 cups
Red Kidney Beans 3 Tbsp
Black Eyed Beans 3 Tbsp
Chole Chana 3 Tbsp
Whole Moong Dal 3 Tbsp
Toor Dal 3 Tbsp
Onions 1 medium
ginger 1 inch
Green Chillies 3-4 nos (or as per taste)
coriander sprigs (a handful)
Salt as per taste
Oil 

Method of preparation - 

Soak all the legumes (Urad dal, Rice, Red Kidney Beans, Black Eyed Beans, Chole Chana,Whole Moong Dal, Toor Dal ) overnite.

Grind to a fine batter and ferment for about 6-7 hrs. (Fermentation is optional)

Just before making the uthappam, chop onions finely, grind ginger and green chillis and mix them in the batter. Also chop coriander sprigs and add it to the batter.

On a hot Tawa, take a ladleful of the batter and spread it to an agreeable thickness and spray some oil and let it brown.

Turn it over and take it out once it is cooked.

Serve it with tomato pickle or peanut chutney or coconut chutney.

Note  : The leftover batter can be stored in the refrigerator for later use.
