This has always been one of the most easiest and favourite curries at home. Frozen mixed vegetables can be used to make it a faster process.



Ingredients - 

Potatoes - 2 medium 
Carrots - 1 medium
Beans - 1 cup
corn - 1/4 cup
peas - 1/2 cup
onion - 1 medium
tomato - 1 medium
cinnamon - 1 inch 
cloves - 3
cardamom - 2 nos
Ginger garlic paste - 1 tsp
green chillies - 2 nos (as per taste)
Dhania/jeera powder - 1 tsp
salt as per taste
turmeric - 1/4 tsp
oil – 2 tsps

To prepare the Gravy 
In a pan, put some oil and saute the chopped onions and add cubed tomatoes. After the tomatoes are cooked, grind the mixture into a fine paste upon cooling.

Method of Preparation

In a pan, pour some oil and add cloves, cinnamon, cloves and cardamom. After they are fried well, add ginger-garlic paste and then the onion-tomato paste. 


Mix in dhania-jeera powder, turmeric and green chillies. Let this mixture simmer for a while, until the oil oozes out.

Separately boil the veggies and add them to the simmering gravy. Add salt as per taste and cover with a lid and let all the flavors blend for about 5 min.

The end result is a lip-smacking curry which goes well with roti or rice.
