Kobbari Bobbattu

This is probably one of the easiest and fastest bobbattu recipe I have ever come across. It is more nutritious than the original version but tastes just as good. This is originally my mom's recipe with some minor modifications.

Ingredients - 

Dried coconut powder (or fresh grated coconut) - 1 cup
Brown sugar (or jaggery powder) - 1 cup
Cardamom powder - 1/2 tsp
Ghee - 2-3 tsp
Whole Wheat Flour - 2 cups
Pinch of salt
Warm water or curd – enough to make a dough

Method of Preparation –

To prepare the filling -
Heat a pan on a medium flame and fry the coconut powder in a spoon of ghee.

Add sugar/jaggery and Cardamom Powder
and sprinkle a few drops of water to get a moist mixture.

To prepare the dough -
In a mixing bowl, add the curd/warm water to the wheat flour and knead to make a chapati dough.

Make a small chapati and put in a spoonful of the filling and close it.
Roll it out into thin circles and cook it on a tawa like a chapati, greasing it with a few drops of ghee on both sides.
