Who doesn't know about a tomato? It is such a common vegetable and a healthy one at it. But last summer, when I went to a local farmer's market, the lady there told me something new - that tomatoes lose their flavor when refrigerated. And later on I googled to verify and indeed she was true. And also washed tomatoes are not to be refrigerated at all as cold water cracks the skin of the tomato giving an entry for the bacteria. We all know that Tomatoes are rich in Vitamin C which also enhances Iron absorption. It also helps in eliminating toxins when on a diet.

So here is a recipe which is easy to make and one your taste buds will love!!


Ingredients -

Cooked rice 3 cups
2 medium tomatoes, finely chopped
1 medium onion, finely chopped
Turmeric - a pinch
Cloves 2 nos
Cinnamon 1 inch
Green chillies 2-3 nos
Coriander leaves for garnish
Vangibath powder 2 tsp (see recipe here)
Salt to taste
Seasoning (oil, chana dal, urad dal, mustard seeds, jeera, dried red chilli, curry leaves)
Lemon/Lime juice 1-2 tsp (Optional)


Method of Preparation - 


In a skillet on a medium-high flame, heat some oil and add cloves, cinnamon and the seasoning. 


After the mustard seeds start crackling, add chopped onion and saute them until golden brown.


Add chopped tomato and let it cook for about 4-5 min.


Add chopped green chillies and vangibath powder and mix well.


Add salt and mix for a couple of minutes.


Switch off the flame add this mixture to a bowl with the cooked rice and mix well.


Garnish with coriander leaves.


Serve hot with raita or otherwise.
