I have been trying to bake a bread (not the quick bread variety) for quite some time now. A few days back, Champa of Versatile Kitchen blogged about Khara Bread. Needless to say, I was very impressed by the recipe and so I had bookmarked it. Today I was in a mood for baking and so was checking my pantry for the required ingredients. I then saw that I had a lot of Mango Ginger in my refrigerator. I shall blog later about this wonder spice called mango ginger or mamidallam (in Telugu). Addition of mango ginger alters the total flavor of the recipe. And it proved right yet again in this Masala Bread. We had this bread with Alu kurma (?) and surprisingly it tasted divine! So check my version of Masala Bread.


Ingredients - 

Bread Flour (Or All Purpose Flour) 3 cups

Yeast 7 oz pkt
Sugar 2 Tbsp
Salt 1 1/2 tsp
Yogurt 1/4 cup
Oil 2 Tbsp
Warm Water 1 cup
Mango Ginger (Mamidallam) 4 inch long
Red Onion chopped 3/4 cup
Green chillies 5-6
Coriander Leaves chopped 3 Tbsp

Method Of Preparation - 


Add sugar to the warm water and pour yeast and mix gently. This should froth up in about 10 min (that is if the yeast is good).


While the yeast is frothing up, in a hot kadai add 1 Tbsp of oil and saute onions until they are translucent. I made a paste of mango ginger and green chillies and added it to the sauteed onions. Let these cool down before adding to the flour mixture.


After the yeast is all frothy, mix in salt , yogurt and the remaining oil. 


Slowly add the flour and knead to make a stiff dough. Now is the time to mix the onion mixture and chopped coriander leaves.


Knead for about 5 min and let the dough rise in a draft free area. I covered it and put it in the oven with the light on as it is pretty cold out here today.


Check after an hour by which time the dough would have doubled in size. Punch down the dough and shape it like a loaf.


Spray oil in the loaf pan and adjust the dough in the loaf pan. Loosely cover with an oiled aluminium foil or cling wrap.


Put it aside again for the dough to rise yet again for another hour or so. After the dough rises above the rim, brush lightly with milk for a nice colored  top.


After about 45 min, preheat the oven to 375 F and place the loaf pan in the middle rack and bake for about 35-40 min. Mine was done in exactly 36 min. The top was firm and brown and the insides were soft and porous.
