Oats Pongal was taking shape in my mind for quite sometime now and I just kept postponing to make it every time. My mom once told me about different varieties of pongal substituting rice with any grain of our choice. Since then, I had a feeling that oats would taste great too. Only recently, I prepared this pongal on a trial basis. I wanted to cook something soft as S had some dental surgery and wasn't able to eat anything too spicy or hard. So I made this pongal a little bland and because of the addition of oats, it gave a near mushy feel which was perfect for S.  Healthy, Simple, Soft and Wholesome all in one!!!

I am sure addition of more spices and / or vegetables would make it extra healthy!

Ingredients -

Rolled Oats 1/2 cup
Moong Dal (Pesarapappu) 1/4 cup
Pepper Corns 3-4
Cashews as desired (Optional)
Jeera 1/4 tsp
Turmeric couple pinches
Ghee/Clarified Butter 1 Tbsp or as desired
Salt as per taste
Garnish with coriander leaves
Seasoning with a 2 tsp ghee, 1/2 tsp mustard seeds, a few curry leaves and hing is optional

Method Of Preparation -

Add a little ghee and roast the pepper corns and cashews in a pan, and set aside. In the same pan, add a little ghee and fry moong dal until they turn a little brown.

In a sauce pan, add the fried moong dal, cashews and pepper corns and about 1 cup of water. Add turmeric and jeera too. Let the moong dal cook until tender(About 12-15 min). Cover with a lid. Optionally all these can be pressure cooked. Since we didn't want the dal to be too mushy and gooey, I opted the stove top way.

While the moong dal is cooking, Cook the rolled oats with a little salt in the microwave for about 2-3 min adding 1 cup of water. Cooking the oats on the stove top is also ok. I preferred it this way as I was in a hurry.

When the moong dal is cooked well, add the cooked oats to the mixture. Adjust the salt and add ghee if desired and garnish with coriander leaves. If desired, the seasoning can be added at this stage just before serving.

Serve hot with Sambar/Gojju/Chutney of your choice.
