Sorghum (Jowar) was a farmer's cereal in India. Gone are those days..These days it is gaining popularity as a healthy cereal useful for bones and teeth. It also maintains the health of heart, controls diabetes, arthritis and weight of the body. The most popular recipe using jowar is Jowar ki roti (Jonna Rotte). However I found that making dosa (crepe) out of jowar is a pretty easy way to enjoy the benefits of Jowar. Point to be noted is that commercially available jowar flour might not contain as much fiber as lot of it is lost in milling. Freshly milled flour is the best bet.
Another point to keep in mind is that Jowar is gluten free and some studies suggest that it might be good for weight loss.

I should have added fenugreek seeds too but didn't.


Method Of Preparation - 



Soak jowar, urad dal over night. 

Just before grinding the batter, soak the idli rava in sufficient water. 

Jowar Dosa

Grind jowar and urad dal into a fine batter adding as much water as is necessary. Mix in the soaked and drained idli rava.

Add salt and let it ferment over night. (Mine fermented very well). Mix the batter with a ladle and adjust the consistency by adding a little water.

On a hot tava, drop a ladleful and spread the batter around in a circular shape quickly into a thin layer. Spray a little bit of oil if needed. (I don't use any oil as I use a non-stick pan)

After the dosa browns enough on one side, flip it onto the other side and let it cook for another 30 seconds or so and take the dosa off the pan. (I observed that Jowar dosa took a little longer to cook than the regular dosa.)

Continue until required number of dosas are done. The left over batter can be refrigerated for further use.

  31. This is a traditional food item from Khandesh, North Maharashtra. It tastes very good by adding Dhana, Jeera, Green Chilli. once you change the side of the dosa put grated gud on it and eat it hot. It is called as Dhinde in the local language.
