If you have been following this space, you know that I am a great fan of whole grains and recently added barley to the list. When I was listing down the kheers I wanted to prepare for this edition of Blogging Marathon, it crossed my mind that I had noted down some key points from an Ayurvedic Magazine long time back. I looked for the notes and found one particular point about Barley Payasam ; that it is very good for growing kids. So I thought I would give it a try and explained to my 9 yr old and she gladly gulped it down. Needless to say the adults at home surely had their share and it was a very filling dessert. So try this healthy kheer for your kids and you can thank me later :-)
So Barley Payasam it is for Day 5.


Barley Payasam


Ingredients - 


Barley 3 Tbsp
Milk 3 cups
Sugar 1/4 cup
Custard Powder  1 tsp (Optional)
Cardamom powder
Almonds, crushed for garnish
Ghee 1/4 tsp


Notes - Upon cooling it became very thick and so I felt that the custard powder was unnecessary except for the beautiful color it imparted. So the choice is yours whether you want to use the custard powder or avoid it!


Method Of Preparation  -


In a heated sauce pan , add ghee and fry the barley until golden brown. Cool and coarse grind to Sooji consistency.


Add this coarsely ground barley to 3 cups of milk and boil while stirring continuously. After about 15-20 min the barley would be cooked well.


Now is the time to add sugar. Mix well until the sugar dissolves.


Mix 1 tsp of custard powder to 3 Tbsp of cold water and mix well so there are no lumps. Add this mixture to the boiling kheer while stirring continuously.  [This is totally optional]


Barley Payasam


Also sprinkle the cardamom powder and remove from fire.


Garnish with crushed Almonds and serve warm. [I sprinkled some crushed saffron too.]
