Zucchini as such is a bland vegetable and I never could have imagined this north Indian style gravy curry. Thanks to my friend who saw it on the internet and passed it on to me. I slightly modified the ingredients to suit our taste. It turned out very rich and silky. The next time I would try it without the cream and check out the difference. I was always under the impression that the gravy curries take a lot of time to prepare and so surprised that this curry was done in under 30 min. I am glad that this qualifies for the theme of 'Curry in a Hurry' as part of BM#5 (Day 3) .


Zucchini Gravy Curry


Ingredients - 


Zucchini , grated 2 cups
Onions , finely chopped 1/2 cup
Tomatoes, chopped 1 cup
Heavy Whipping Cream 4 Tbsp (I used 'Reddi wip' whipped cream)
Milk 1/2 cup
Garlic, crushed 2-3 cloves
Turmeric 1/4 tsp
Red Chilli Powder 1/2 tsp 
Garam Masala 1/2 tsp
Salt as per taste
Coriander leaves for garnish
Seasoning (Oil 2 Tbsp, Jeera 1/2 tsp)


Method Of Preparation -


In a heated sauce pan, add a teaspoon of oil and saute the onions until translucent. Add crushed garlic and tomatoes and cook until the tomatoes are mushy.


Remove the cooked mixture and make a paste upon cooling. [I like to make a paste of the cooked onion-tomato mixture for the gravy base. But this is totally optional.]


Clean the sauce pan and put it again on medium heat. Add the remaining oil and saute the jeera. Add the ground onion-tomato paste, turmeric, red chilli powder and cook till oil oozes out. 


Now is the time to add the grated zucchini and mix well. Cook for a couple minutes and then add the whipped cream and milk. Also add in the salt as per taste, cover with a lid and let it cook for about 7-8 min.


The curry becomes creamy with oil oozing out. Sprinkle some garam masala and give a gentle mix and cover with a lid. 


Remove from fire and garnish with coriander leaves just before serving.


Zucchini Gravy Curry


Tastes good with Roti/Naan or even with steaming  hot rice/pulao.
