This Toor Dal fry happened on a weekday evening when I suddenly realized that I had run out of all vegetables suitable for a curry! I think this happens to everyone at least once a while? What do you all do on such occasions? I would love to hear your ideas for a 'No Vegetable' Curry :) Anyway I was glad to have had this inspiration from my other half! The kids loved this too. 


Toor Dal Fry


Ingredients -


Toor Dal 1/2 cup
Onions, finely chopped 1/2 cup
Coconut Powder or Grated Coconut 1 Tbsp
Green Chillies 1-2 (or as needed)
Salt as needed
Seasoning (Oil 2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Mustard seeds 1/2 tsp, Jeera 1/2 tsp, Red chillies 1-2, Curry leaves few, Hing a couple pinches)
Dash of lemon juice if preferred


Method Of Preparation - 


Cook Toor Dal al dente with adequate water on the stove top. (It took me about 18 min. But the time varies according to the toor dal variety and water used. I added exactly 1 cup of water for 1/2 cup dal)


In a sauce pan, heat oil and add the seasoning in the order specified. After the mustard seeds pop, add the finely chopped onions and saute till they are golden brown. Also add in chopped green chillies and turmeric.


Toor Dal Fry


Add the cooked toor dal and saute for a minute or two. Add salt and sprinkle the coconut. Mix well and remove from fire.


[Garnish with chopped coriander leaves if preferred.]


Squeeze a little lemon juice and serve it as a side dish for Dal and enjoy!!
