Cashew Vegetable Quiche

Quiche (pronounced as keesh) is typically part of French Cuisine. According Wiki, it is essentially a savory bake, with open faced pastry crust with a savory filling. This particular variation of Quiche is highly nutritious, egg free and kid friendly as well. This can easily be made vegan by substituting Tofu for Paneer.

This was my first attempt at baking a quiche/pie of any kind. I am yet to master the crust making and crimping process. But my family didn't care a whit about the appearance. Though the process sounds a little laborious, I didn't feel it was as daunting as it sounds. And trust me the end product is worth whatever effort/time it takes!! 

So it is C for Cashew Vegetable Quiche under 'Baked Dishes' for BM#32.

Ingredients - 
For Crust -
Whole wheat flour 2 cups
Baking powder 1/2 tsp
Salt 1 tsp
Olive oil 3-4 Tbsp
Water, cold 1/2 cup
Lemon juice 1 tbsp
I used Italian Seasoning 1 tsp (optional)

For Stuffing -

Mixed Vegetables (I used a mix of onions, carrots, green beans, peas and corn) 1 1/2 cups
Olive oil 1 tbsp
Tomatoes, chopped 1/2 cup
Garlic, minced 1 tsp
Green chilli, chopped as needed
Red chilli flakes as needed (I didn't add)
Salt to taste

For Topping -

Cashew 1/2 cup soak for 4 hrs and drain water
Paneer approximately 3/4 cup
Corn flour 2 tsp
Lime zest 1 tsp
Salt – 1/2 tsp

For Garnish - Sliced Tomato and Colored Capsicum



Cashew Vegetable Quiche

Method Of Preparation -
To Prepare the Crust - 
In a mixing bowl, add flour, baking powder, salt, oil, Italian seasoning. Gradually add cold water and mix well to form a stiff dough. Knead well, cover and set aside.

Prepare your pan by greasing it all over. Roll out the prepared dough according to the pie plate measurements. 

Lay the rolled out dough onto the prepared pie plate, remove any excess dough hanging over and crimp the edges if needed.

Prick with a fork all over the base of the quiche to ensure that the crust turns out crisp. Cover and refrigerate for a few minutes while the filling is ready.

To Prepare the Filling - 
In a heated pan, add oil, saute onions and garlic, then add the chopped vegetables and let them cook until just done. Add in the green chillies and salt. Remove from fire and set aside.

Assembling the Quiche - 
Preheat the oven to 375 °F.

Grind the cashews, paneer, corn flour, lime zest and salt adding as much water as needed to make a smooth paste.

Blind bake the quiche crust for about 10-12 minutes until it is crisp and set. Remove from the oven. 

Mix the cashew paste and the vegetable filling well. Evenly spread the filling in the quiche pan. Garnish with some tomato and colored capsicum slices. Sprinkle some red pepper flakes for some added color (I didn't add).

Bake it for 35-40 min until the edges are crisp and the filling is set. Let it cool for 10-15 min before slicing.
