Double Ka Meetha

Being a Hyderabadi, I am a little surprised that I have not yet blogged this Nawabi dessert from that place. It is also known as Shahi Tukda. Even today, it is made as part of wedding menus across all communities.

Though I make it at home quite often, I prefer to make it the 'low fat way' and still retain the richness of this ever popular Nawabi dessert!

D for Double Ka Meetha qualifies under 'Regional Cuisine' for BM #32.

Ingredients -

Bread Slices 6-8
Butter as needed

For Low Fat Rabdi -
Milk Powder 3/4 cup (Low fat)
Milk 1 1/2  cups (divided use)
Sugar 2-3 Tbsp
MTR Badam Powder 1 Tbsp (Optional)

Saffron a pinch (Optional - I didn't use)
Cardamom Powder 1/4 tsp
Nuts of your choice for garnish

Double Ka Meetha

Method Of Preparation -

To Make the Low fat Rabdi -
In a microwave safe bowl, add the milk powder and about 3/4 cups of milk and whisk well.

Cook in the microwave in 30 sec intervals until it resembles khoya. It took me about 6-7 min.

Add sugar, cardamom powder, badam powder (if using), and the remaining milk. Cook for 4-5 min and let it cool.

Blend it smooth and let it chill for an hour.

To make Double Ka Meetha -
Typically the bread slices are cut diagonally and deep fried in clarified butter (ghee). But since I believe in low fat cooking, I buttered the bread slices and toasted them on a griddle until they are evenly browned.

Just before serving, arrange the fried bread slices in a serving platter and pour the Rabdi on them. Garnish with chopped nuts and serve!
