For Day 2, Week 3 of BM #36, here are these delightful and healthy tater tots. I made them on a snowy evening and the kids enjoyed these tater tots hot out of the oven looking at the snowfall!!
Sweet Potatoes 4 Medium size (about 3 cups grated)
Salt as needed
Onion Powder 1/2 tsp
Garlic Powder 1/2 tsp
Crushed Black Pepper 1/2 tsp
Bread Crumbs 1/2 cup (I powdered 2 bread slices)
Method Of Preparation -
Wash the sweet potatoes and pop them in boiling water and let them cook for about 10 min. Remove and let them cool.
Grate the sweet potatoes (which will eliminate the skin). Sprinkle all the spices and bread crumbs. Mix well.
Preheat the oven to 400 °F.
Pinch half tablespoon of the mixture and roll them in the shape preferred (I rolled them in the shape of the commercially available tater tots).
Arrange them on a parchment lined baking tray.
Bake for about 30 min flipping them in between.
Remove and enjoy them hot with sauce of your choice!
