I had bookmarked this recipe from Pari's space and was very excited to make these for the kids.
So over the weekend when the kids were out, I thought I would make this quick snack for them as a surprise. But to my disappointment the process took a longer time than was mentioned in the original recipe. But as soon as my kids tasted them and I saw their huge smiley faces, I felt that the time spent on these was worth every second!!
My older one says that these taste somewhere between fluffy pancakes and a cake. She said that without the powdered sugar topping the cakes were slightly on the less sweeter side. So be creative in serving these with a variety of toppings (Maple Syrup, Chocolate syrup, Butter, Jam etc)
So make these to surprise your kiddos while I send these off to our BM group as part of Day 3, week 4 of BM #36.
All Purpose Flour / Maida 1 cup
Baking Soda 1/4 tsp
Baking Powder 3/4 tsp
Yogurt 3/4 cup
Sugar 1/2 cup
Vegetable Oil / Canola Oil / Butter 1/4 cup
Vanilla Essence 1/2 tsp
Oil to grease the Sandwich Maker moulds
Topping - Powdered Sugar 1/4 cup

Method Of Preparation -
In a mixing bowl, blend the wet ingredients, namely sugar, oil/butter, yogurt and vanilla essence.
In another bowl, whisk the flour, baking soda and baking powder.
Gradually add the wet ingredients into the flour mixture and gently mix until well blended. Make sure the batter is slightly flowy like pancake batter.
Grease the sandwich maker, gently pour about a tablespoon of batter and spread into the mould.
The original recipe says 3-4 min. But I had to let it cook for 12 min for the first batch and 7 min for the subsequent batches.
Remove and continue with the rest of the batter.
Serve them warm with a topping of your choice. I sprinkled powdered sugar for my kids.
