Mixed Vegetable Kurma with Roti


For Day 3 Week 4 of BM #40, here is another lunch box favorite of my older one. 

This kurma is something I prepared for a variation and tried to make it a little rich with the cashew paste and paneer. But the majority at home voted for this version to become the de facto standard :).

Mixed Vegetable Kurma with Roti



Ingredients - 

Carrots, Beans, Potatoes, chopped and partially boiled 4 cups
Paneer, cubed 3/4 cup
Onions, finely chopped 1 cup
Tomato Puree 1 cup (I used Pasta Sauce)
Cashews, soaked, ground to paste 3-4 Tbsp
Ginger-Garlic-Green Chilli Paste 2 Tbsp
Garam Masala 1/2 tsp (or as needed)
Kasuri Methi 1 tsp
Salt as needed
Red Chilli Powder as needed
Turmeric 1/2 tsp
Seasoning (Oil 2 Tbsp, Cloves 4-5, Cinnamon 2- 1 inch sticks, Shajeera (Carraway seeds) 1/4 tsp, Pepper Corns 4-5)
Coriander leaves for garnish


Mixed Vegetable Kurma with Roti

Method Of Preparation -

In a heavy bottomed pan (I used a pressure cooker), add oil and the rest of the seasoning ingredients.

Add the onions and saute until light brown. Add in the ginger-garlic-green chilli paste and fry for a minute. 

Add the tomato puree and turmeric. Let the mixture cook until the oil oozes out.

Add the cashew paste, kasuri methi, garam masala, red chilli powder and salt.

Add all the partially boiled vegetables and paneer. Cover and let it cook for about 10-15 min or for up to 1 whistle in a pressure cooker.

Remove from fire, and garnish with chopped coriander leaves before serving.

I packed this kurma and roti for my older one and she was one happy kid :).
