One evening, my little one pestered me for Strawberry cupcakes. So I had no other option but to prepare these. Kids drive you crazy at times, don't they? She was constantly following up  on me,  'Amma, are the cup cakes ready yet?', 'Amma, How are the cup cakes coming along?', 'Amma, Can I see them ?' and so on. I actually counted that she 'enquired' 14 times in an hour or so.  
I had bookmarked this a long time back and it sure came in handy. I wasn't sure if I should be amused or frustrated! Anyway the kids enjoyed the cupcakes and thats the most satisfying thing of all, right? I surely made a few changes to suit my taste. The texture was perfect and so was the taste. Only problem was with the chopped strawberry [maybe slicing them as in the original recipe is a better idea] . There were lot of gaps in the cup cakes around the strawberry bits. But the kids loved the soft bite into the strawberry and so did we!

Dessert - Eggless Whole Wheat Strawberry Cupcakes



Eggless Whole Wheat Strawberry Cup Cake


Ingredients - 


Whole Wheat Flour 1 1/2 cup
Milk 1 cup

Sugar 3/4 cup
Milk Powder 3/4 cup

Butter 6 Tbsp
Vanilla Extract 1 tsp
Baking Powder 1 1/2  tsp
Baking Soda 1 tsp
Strawberries Chopped 1 cup
A few drops of lemon juice plus 2 tsp sugar for the strawberries



Method Of Preparation - 


Chop the strawberries and add a few drops of lemon juice and 2 tsp of sugar and set aside.


Sift the flour, baking powder and baking soda and keep aside.


Eggless Whole Wheat Strawberry Cup Cake


In a big mixing bowl, add butter (melted) and vanilla essence for a couple minutes.


Then add in sugar and milk powder and beat for another 2 min or so.


Gradually add the flour and milk alternating them. Beat it for another minute. Make sure the batter is of idli batter consistency.


When the batter is ready, gently fold in the strawberries.

Pour the cake mix into the lined cups and bake them for 25-30 min or until a toothpick comes out clean when pierced. (Mine took exactly 30 min).
