An interesting fact about this vegetable is that it is the source for Guar gum which is mainly used in dairy products like ice cream and cheese. Apparently, Guar gum is useful in weight loss and diabetes treatment. The fiber in guar slows down the digestion of a meal. The slow digestion means you feel full for a longer period of time, and eat less, thereby helping you lose weight. It is also a very good source of protein. I am told that Guar gum is very beneficial to new moms. With this added nutritional profile, I will probably make this more often at home!

Ingredients -


Cluster Beans (Finely Chopped) 3 cups 
Peanut-Coconut masala - 1/4 cup (click here for the recipe)
Turmeric - a pinch
Onion - 1 medium, finely chopped (Optional)
Salt to taste
Seasoning (oil, chana dal, urad dal, mustard seeds, dried red chilli, curry leaves)

Method of preparation - 

Boil the chopped cluster beans.


In a heavy bottomed pan, heat oil and add the seasoning to it.


After the mustard seeds splutter and the chana dal and urad dal turn golden brown, add the chopped onions and saute until golden brown.


Add the boiled cluster beans and turmeric, the peanut-coconut masala and salt and mix well.


After about 2-3 min the curry is ready to be served with steaming hot rice!!
