My 9 year old is/was (Gotto check her preference now!) a great fan of Chinese Fried Rice in the food court of a mall nearby. So I googled and looked into various versions of this recipe and ultimately came up with this to please her palate. Looks like this is 'okay' for her (and a bigger nod by her dad!) which in itself is a great thing! For Moms of picky eaters like her it is an eternal penance trying to please them ;) (Can anybody disagree on this??) 
I avoided egg in this. Also I have seen that vinegar is added to this recipe, which I didn't add either. Also baby corn, mushrooms and/or a few other veggies can be added. Here is my version..


Chinese Fried Rice

Ingredients - 
Basmati Rice 2 cups (Any Rice should be okay)
Tofu Fried/Roasted/Sauteed 3/4 inch cubes 10-15
Carrots chopped 1/2 cup
Peas 1/4 cup
Celery chopped 3 Tbsp
Onions sliced 1/2 cup
Cabbage sliced 1/2 cup
Spring Onions 1/2 cup
Oil 2 Tbsp
Soy Sauce 2 tsp or as desired
Tomato Ketchup 2 tsp (Optional - I didn't use)
Chilli Garlic Sauce (I used Sriracha Brand) 1 Tbsp
Salt as per taste
Note - 
*In a few other attempts, I used brown rice and tomato ketchup too and it was liked very much at home.
*The color of the rice here is a little light because of the soy sauce and also because tomato ketchup is not added.


Method Of Preparation - 

Cook rice so the grains are separate and let it cool in a wide mixing bowl. It tastes better with leftover rice.

Meanwhile, in a heated wok, add oil and saute the sliced onions. After they are translucent, add the remaining veggies and stir fry until they are cooked but have a crunch. Now is the time to add the sauteed tofu. 

Add soy sauce, chilli-garlic sauce, salt and tomato ketchup (if using) and mix well. 

Reduce the heat, and add the cold cooked rice and mix well.

Fry for about 3-5 min and remove from heat.

I garnished with sliced onions and served for lunch on a weekend.
